Colombia Inzá Veredas Washed Process

Region: Inzá, Cauca
Tucked into the mountains of Inzá, Cauca, this coffee brings together harvests from neighboring veredas (small villages) connected more by winding roads and shared work than by distance on a map.
The journey into this region follows the Río Páez, crossing a suspension bridge before climbing into the hills where these coffees are grown. It’s a landscape defined by elevation and effort, with farms stretching between 1,500 and 2,000 meters above sea level.
This lot is anchored by coffees from San Antonio, where small producers carefully process their harvest using traditional washed methods, hand-cranked depulpers, open-air fermentation, and slow drying in covered parabólicos (see photo!). Each step is intentional, preserving clarity while building depth and sweetness in the cup.
IN THE CUP
Warm, familiar notes of malted chocolate lead the way, balanced by a bright citrus lift and a soft honeyed sweetness. It’s a cup that feels structured and smooth, with just enough brightness to keep things lively.
