Natural Process

This coffee comes from Hacienda Sonora, a fifth generation family-run farm in Costa Rica’s Central West Valley. Surrounded by volcanic soil, native forest, and cool mountain air, the farm creates an environment where coffee can develop exceptional sweetness and complexity.

This lot was processed using the natural, or dry-process method, where the coffee cherries are dried with the fruit still intact. The extended contact between the seed and fruit allows vibrant sugars and fruit character to develop naturally, creating a cup with bold sweetness and layered tropical notes. Carefully managed drying beds and consistent airflow help maintain clarity while enhancing the coffee’s expressive character.

We create unique roast profiles designed to unlock each coffee’s distinctive natural flavors. For this offering, we chose a medium roast that preserves the coffee’s vivid fruit character while balancing it with structure and sweetness.

In the Cup
Jammy notes of blackberry wine and tropical passionfruit lead the cup, rounded out by a smooth honey sweetness that lingers through the finish. It’s a vibrant and expressive coffee with both richness and clarity. This coffee shines as a pour-over or filter brew where its fruit-forward character can fully open up.
