This decaf lot comes from Cooperativa Agraria Cafetalera La Prosperidad de Chirinos (CAC), a coffee cooperative in San Ignacio, Peru that has been supporting small producers since 1968. Founded to improve market access and strengthen opportunity for local farmers, CAC has grown into a community-centered organization focused on organic production, education, technical support, and gender equity initiatives.

The coffees that make up this lot were grown between 1,600 and 2,000 meters above sea level and processed using traditional washed methods before being sent to Swiss Water in Vancouver, Canada for decaffeination. Their chemical-free process uses only water to gently remove 99.9% of the caffeine while preserving the coffee’s natural sweetness and character.

Decaf often carries a reputation for sacrificing flavor, but coffees like this challenge that idea entirely. This lot stood out to us for its comforting sweetness, soft structure, and classic coffee character that feels approachable any time of day.

IN THE CUP

This is a delicious, smooth and familiar profile with notes of milk chocolate, malt, and maple syrup sweetness. Rounded, comforting, and easy drinking, this is the kind of coffee that feels just as good in a quiet morning mug as it does in an evening pour-over. Balanced and approachable across brew methods, this coffee shines as a drip coffee, French press, or espresso, without keeping you up all night.

  • Region: Chiapas and Oaxaca, Mexico

    This lot was sourced from farms in Mexico's Southern Chiapas and Oaxaca growing regions, with an altitude range of 900 to 1500 meters above sea level. The coffees were wet processed, and either dried on patios or in mechancial dryers. The coffee was then decaffeinated at a plant in Mexico who use a chemical-free water process that results in a flavoursome coffee without the caffeine.
