The farmers use a variety of soil to cultivate the cherries, a few being sandy loam and loamy clay. The altitude of this mill is between 1520 and 1770 meters above sea level.
After cherries are received at the mill, they are processed accordingly and dried on raised beds and canvases. They are moved multiple times a day throughout the average one month drying process to ensure an even and uniform average moisture content across the lot. After the drying process, the beans are stored in a dry space, ready to be prepared for export.
